Guided by Chef Fernando Arévalo’s mission to share the heartbeat of Colombia with diners through food, the menu reimagines traditional dishes through a contemporary lens, showcasing bold flavours and distinctive ingredients sourced from Colombia and beyond. Signature highlights include Ceviche Salvaje with Sashimi-Grade Sawara, Colada Tiger’s Milk and Cassava Rambutan; Pincho de Langosta featuring Grilled Lobster Tail, Coconut, Plantain and Leeks; and Churrasco de Cordero y Pandebono with Slow-Cooked Lamb, Mushrooms, Colombian Bread and Confit Egg.
