Le Pristine Singapore marks renowned Dutch Chef Sergio Herman’s debut in Southeast Asia at the newly refurbished Grand Hyatt Singapore. The casual fine dining restaurant balances tradition and innovation, offering a “New Italian” take on one of Europe’s most well-known cuisines.
Chef Sergio, once the mastermind behind 3-Michelin Star Oud Sluis in the Netherlands, presents rich, creative and fresh-on-the-palate dishes that are a creative fusion of Italian and Zeeland flavours made from the best of seasonal ingredients. Featuring signature creations such as Pizzette Chilli King Crab with Basil and Zucchini, as well as the Le Pristine Signature Seafood Orecchiette, enjoy the theatrics of an immersive gastronomic experience alongside magnificent moments in a space infused with music, art, design and fashion.

Chef Sergio is a prominent figure in the culinary world, known for his distinctive character and bold, innovative approach. His subtle sense of style and pursuit of perfection ensure a consistently exceptional culinary experience. His passion and dedication drive him to deliver unmatched taste sensations in unique surroundings, always striving to serve the best.
Chef Sergio inherited his love for cooking from his father. They worked together for years at ‘Oud Sluis’, before Sergio took over the restaurant in 1990. Oud Sluis earned three Michelin stars and after the success of Oud Sluis, Sergio Herman opened Pure C (2 Michelin stars), The Jane (2 Michelin stars), Airrepublic (1 Michelin star), and Le Pristine Antwerp (1 Michelin star).
